Cocktail Recipe: Clanton Buck

    The mid-July heat is tortuous, but the Alabama peaches provide sweet, juicy relief. Pair that peachy flavor with Dread River Whiskey as the Magic City sun sets and you can call it another fine summer day. Since the Market at Pepper Place, just a stone’s throw from our distillery, and all the other local farmers’ markets are chock full of ripe, fresh peaches, whip up a batch of Peach Simple Syrup and make our Clanton Buck cocktail!

    Here’s what you’ll need:

    Peaches: Ripe, fresh peaches, preferably organic.

    Water.

    Sweetener: Choose your favorite—regular granulated (white) sugar, raw cane sugar, brown sugar, honey, or even agave. Each one has its specific colors and flavor variations that will of course influence the final flavor and look of the syrup.

    Our Dread River Whiskey, aged at least five years, is a blend of corn and wheat whiskies. It is a rich blend of dessert flavors, offering caramel and butterscotch hints on the nose and palate—a perfect pairing for ripe summer peaches. Crisp and cold and garnished with a mint sprig, this is a cocktail you’ll love.

    Clanton Buck Cocktail

    1½ ounces Dread River Whiskey

    ½ ounce Peach Simple Syrup, recipe following

    Slice of peach, for garnish

    Fresh mint sprig, for garnish


    For the Peach Simple Syrup:

    1 cup sugar

    1 cup water

    2 cups sliced fresh peaches

    1. Add water and sugar to a large, heavy-bottomed pan or skillet and heat over medium heat, bringing to a boil, stirring often until the sugar dissolves.
    2. Add peaches and let them simmer, gently stirring occasionally, until they begin to break down and liquid mixture has reduced and thickened.
    3. When consistency is syrupy, remove from the heat and let cool for 20-30 minutes.
    4. Strain mixture through a fine-mesh sieve. If desired, press down the peach pieces to extract as much syrup as possible. (Use the remaining peach slices over ice cream or waffles!)


    To Serve: Combine whiskey and Peach Simple Syrup in a cocktail shaker and shake. Strain into a rocks glass over ice. Garnish with a slice of fresh peach and a sprig of mint.
