Cocktail Recipe: The Paloma

While the margarita is the iconic cocktail of Latin culture to most Americans, La Paloma is the most treasured cocktail in Mexico. Traditionally, it is made with tequila, fresh lime juice, and grapefruit-flavored soda, like Jarritos, and served on the rocks with a salted rim. However, in the States people mostly use Fresca or Squirt. And in Texas, where authentic Mexican cuisine is well-known and well-loved, the Paloma is king and Squirt is the hands-down mixer of choice. Locals keep it on hand like a beloved condiment, so they can pair it with tequila like a rum and Coke. After all, in the blistering Texas summer sun, the stripped down structure of the drink is simple: tequila and grapefruit. So, it’s understandable that an ice-cold sweet-yet-tangy grapefruit soda with a splash of lively tequila would hit the spot.
Others in Texas dress the drink up in celebratory style, anointing the drink with fresh Rio Red grapefruit juice, chile-spiced tinctures, lime-laced simple syrup, and tamarind-infused Himalayan sea salt, among other creative mixologist magic.
The Dread River Paloma deviates from the classic by using our in-house Blue Agave Spirit. Similar to Mexican tequila, but distilled in Birmingham, so classified as an "agave spirit," this spirit is smooth and slightly sweet with subtle fruity, earthy, and herbal notes on the palate. It has the tart and slightly citrusy notes of the edible cactus nopales. The aroma blossoms with hints of pear and honeydew and does not give off the typical tequila nose. The finish is smooth and memorable. When paired with our freshly squeezed ruby red grapefruit and lime juices, a little sugar, a splash of housemade soda water, and a salty rim, it is simply divine—perfect for summer sipping.

Dread River Paloma
2 ounces Dread River Blue Agave Spirit
4 ounces ruby red grapefruit juice
1/2 ounces lime juice
1 teaspoon sugar
Housemade soda water (or your favorite sparkling water)
Garnish: grapefruit wedge or wheel
Rim glass with salt. Combine grapefruit juice, lime juice, and sugar in glass and stir until sugar dissolves. Stir in blue agave spirit, add ice and top with soda water. Garnish with grapefruit.
