Bourbon may be closely tied to Kentucky in the public imagination, but its legal story is wider than one state. It can be made anywhere in the United States, as long as it follows the rules that give the spirit its structure, sweetness, and oak-forward character.

Step 2: Milling, Mashing and Cooking

To understand how bourbon is made, start with how grain becomes sugar. The grains are milled, then cooked in water to convert their starches into fermentable sugars.

Corn requires the highest temperature, followed by wheat and malted barley, which is cooked at the lowest temperature because heat can damage the enzymes in the malt. The result is a warm mixture of starchy grain and sugar, ready for yeast to begin its work.

Step 3: Fermentation

Yeast enters the cooled mash, and an invisible architecture begins to form. Over 72-96 hours, sugar turns into alcohol and a complex array of flavors, including esters, aldehydes, and early flavor compounds that will later find their way into your glass.
